Grilled radicchio with walnuts and balsamic vinegar
Ingredients per 4 Portions
red radicchio, 2,2 pounds
olive oil, 4 spoons
walnuts, 3.5 oz
rosemary, 1 spring
aceto balsamico, 2 spoons
salt, to taste
pepper, to taste
Clean and wash the heads of radicchio, drain them and cut them into quarters.
Arrange the radicchio the bottom of a pot and season with oil, salt, pepper and a sprig of rosemary. Cover and marinate in refrigerator 20 minutes.
Drain the radicchio from the marinade and cook on a very hot grill for 5-6 minutes, turning frequently to prevent blacken too.
Serve immediately before the table sprinkled with chopped nuts and Aceto balsamico.
