Torrone of Cremona gelato

Ingredients per 5 Portions

whole milk, 1 + 1/4 cup
heavy cream, 3/4 cup + 1 tbsp
white sugar, 1/2 cup
honey, 1 tbsp
carob flour, 1/2 tsp
torrone of Cremona, 1 cup


Preheat the gelato machine before putting the bowl in. In a saucepan add milk, heavy cream, carob flour, sugar and honey. Stir constantly and bring the mixture to a temperature of 85°C.
Turn off the heat and let the mixture cool in the refrigerator for a couple of hour.
Pour the mixture into the basket of the gelato machine. Turn it on and let work for about 30 minutes.
Add the chopped torrone, mix well, and place the torrone of Cremona gelato in a container and store in freezer until ready to serve.
