The Aceto Balsamico di Modena IGP is sorted
Balsamic Vinegar of Modena is not just a condiment, but a real quality ingredient to be used in different preparations, both sweet and savory.
This is how the project in collaboration with the PGI Balsamic Vinegar Consortium of Protection was created in order to produce a series of recipes that tell both the Emilia region and, more generally, the Italian gastronomic culture.
The 5 recipes proposed by I Love Italian Food and made by chef Alberto Sileo range from the Veneto with the typical creamed cod, accompanied by a crispy polenta and drops of Aged Balsamic Vinegar, the tosone (Parmigiano Reggiano of a day) wrapped in bacon and served with some tears of Balsamic Vinegar of Modena PGI. Do not miss the desserts and, for Christmas, we have proposed a Panettone filled with cream zabaione and balsamic vinegar: a real treat for the sweet lovers that can not give up the dessert.
